Best chicken I’ve ever tasted with a few changes to the recipe. Substitute Minced Garlic for Garlic Powder. Add dash of dried oregano. Triple the lime juice. Add 2 tablespoons Sriracha. Add 4 tablespoons honey. Use boneless skinless chicken thighs instead of breasts for grilling. This was so delicious and made the chicken really tender (I marinated it with the spices for an hour before grilling). Served it with grilled pineapple sprinkled with a tangy lime/salt seasoning). So easy! And delicious! First time I added the marinade as I seared the chicken, second time after I seared it. Prefer the second method. I let the marinade cook at high temp a couple min before putting the skillet in the oven. Both times I used boneless, skinless thighs but next time will follow recipe and expect even better taste. I made this for dinner tonight and my husband and I both love it, no changes to the recipe. Very tasty! The only reason I gave it 4 and not 5 stars is because my chicken took much longer to cook than 3-4 mins/side and ended up burning the herbs. Still yummy. Next time I’ll pound out the breasts. Also, I used a liberal amount of fresh herbs, probably 1T of rosemary and thyme and 1/3 oregano as listed. I will definitely do that again. Love that there is only 1 pan. I made this recipe tonight with huge thick chicken breasts. It took about 35 minutes to get it up to the right temp because they were so big. I also didn’t have any paprika so I used just a bit of chipotle. This was hands down the best chicken I have ever fixed. My husband and son loved it even more than I did. This chicken recipe is so versatile and delicious! I have made this a few times and it’s always a hit. I’ve tried the different seasoning variations and they are all amazing but the original is my go to. Love how tender this chicken always turns out. I spent 40 dollars and purchased a cast iron skillet just for this recipe and I think it only made the dish even better. Using the skillet for everything now. worth every penny. This was amazing. People look at me and say ” I don’t eat thighs”. You will if you try this. I absolutely love this recipe! I’ve made it 3 or 4 times in the last month. Made this recipe twice already. My family loved it! Made it with a side of pasta and rice. Added red pepper flakes on top for spice. My daughter typically doesn’t like the taste of lemons, so I was a little worried that she wouldn’t like it. She ended up gobbling it up and did her happy dance! My husband couldn’t get enough of it either and went back for thirds. I served it diced up and on fettucini, with a side of steamed broccoli.
